Dandelion sherry

• 1 litre cream sherry
• 500g dandelion flowers

Rinse the dandelions to remove any creatures. They may die happy, but their deaths will be on your conscience.

Fill a large kilner jar with the flowers and cover with sherry.

Leave overnight, then strain into bottles and store for a month or two before using as a passable sweet vermouth substitute.
