Christmas nut cheese

Crack the nuts, discarding any really dry ones, then soak them over night in water.

Drain and rinse, then blitz with just enough water to catch the blades of the blender.

Crush (or disassemble if it’s a capsule) the probiotic tablet and mix well with the nut paste.

Leave for 12-24 hours at room temperature till the mixture tastes tangy, then season with salt and mix well.

Strain any excess liquid gently through muslin.

It should be quite happy for a couple of days in the fridge.
